The journey of The Lake Elmo Inn began with Chef John Schiltz, who started at the Inn at age 16 as a dishwasher. Though under different ownership at the time, John dreamed of one day owning the Inn and turning it into a hub for world-class dining.

WHERE IT ALL STARTED

John refined his skills at top restaurants, including Hyatt properties in Des Moines, Kansas City, and Minneapolis. In 1983, when his former boss put the Ben’s Elmo Inn up for sale, John made his vision a reality. Since then, he’s built lasting relationships with the community, earning accolades such as Restaurateur of the Year in 2006.
